Summary
There's a reason raw eggs are gooier than their cooked counterparts. It all comes down to the matter eggs are made of. Like all matter, an egg has certain properties. Some are physical, like its state and color. Others are chemical, like how it reacts with other substances. As conditions change, properties can change, too. Cooking eggs turns them from a clear, gooey liquid into a white, floppy solid. Similarly, cooling water can turn it from a liquid to a solid. But heating it can change it back from solid to liquid.
